While hummus has become the most popular dip globally, earning $1 billion a year annually, most people don’t know how hummus was invented! This year I shared the history of this dip at the RootsTech Conference in Salt Lake City. I gave out samples of the hummus to the audience, and I can’t tell you how many people told me they felt like they were trying real hummus for the first time and how delicious it was!
The hummus you buy in supermarkets is not traditional hummus. These brands want maximim profit and a long shelf life, so they skimp on important ingredients like fresh lemon juice, tahini, and garlic. Real hummus truly is a beautiful journey and collabaration of countries going back 7000 years, while sad store bought hummus is just a blend of chickpeas, citric acid, processed seed oils, and salt.
In the video below, you can check out my talk where I share the true history of hummus. Hopefully this video will give you a deeper understanding and appreciation for the most famous dip in the world. For an easy, foolproof recipe for perfect hummus every time, just follow my recipe below!
PERFECT HUMMUS EVERY TIME
- 1 can chickpeas (hold on to that liquid)
- 1 – 2 cloves minced garlic
- Salt to taste (about 1/2 tsp)
- 1 tsp cumin
- Juice of one lemon
- 1/3 cup tahini
- Olive oil for drizzling
- To a food processor, add the chickpeas, half of the chickpea liquid, garlic, cumin, lemon juice, and tahini. Blend until ultra creamy. If the hummus is too thick, add a little more chickpea liquid or water until you get the desired consistency. Drizzle with olive oil before serving.
